If you offer to pay it might be taken as you not actually wanting him to pay and he might think he was somehow insulting you or being sexist if he insisted.

A "test" is a bad way of putting it, but I agree with Tervsitter. It's really just a way to gauge the guy and how he reacts/handles it when you offer to pay. I wouldn't completely write him off if he lets me pay since I *did* offer and all, but it really doesn't earn him any bonus points.
