alright,,,, I dont think I would ever want to do it

but for anyone thinking of switching to this lifestyle, do you have examples of some actually tasty recipes(things you honestly believe meat eaters would really enjoy) for a meal?

I am supposed to be vegan (so edicts the doctor) for
about 4 years now, I cheat like mad.

Howsomever, I have learned to make many dishes w/o meat
that the meat-eater takes down just as fast :-)

You can make bean-based tacos with all the trimmings;
I make my beans from scratch, add onions and cheese.

There is Mexican lasagna, that is layered corn shells
with sauces and cheeses and beans.

Pasta with anything, cheeses, vegetables, tomato-based
sauces.

I stuff zucchini with a cottage cheese mixture (bread
crumbs, onions, cheeses) that is still good cold.

We throw vegetables on the bbq; sliced eggplant, yellow
squash, zucchini, fresh corn..if fish isn't out of the
picture, layering a kebob stick with shrimp is yummy
on the barbie.

I always have on hand a cooked combo of diced gold
potatoes and a couple heads of broccoli, some butter, S&P.
(Mixed together..meat-eater loves it :-)

I usually also have cheesy creamed cauliflower in the fridge,
which the meat-eater TRIES to get some.

To replace meat and the protein derived from it you can add
nuts whenever you want, I eat sunflower seeds, pistachios
and cook with walnuts, peanuts and pecans a lot.

sounds good except the beans or eggplant,,,,

potatoes and broccoli sounds like an interesting combo,,and filling,,,,

I have had veggie lasagna, and when its LOADED with plenty of veggies, I love it

thats really the only veggie type dish that I enjoyed so far besides veggie lasagna,, I tried veggie chili but its just not the same..lol

thanx for all the suggestions though, I am going to try the potatoes and broccoli,, drinker

I undercook both the potatoes and the broccoli
because it helps them retain moisture, toss with
butter, great staple to have in the fridge :-)

I have been to a vegetarian restaurant and could
hardly find anything decent to eat.

I have been vegan off and on for many years, and am not much of a cook.
I deviate from my diet only if it is something I have caught or killed myself.I also have eaten wild game that my brother has prepared. He is a really good cook, and just has a natural ability with all of that.
In the winter I like to make pots of beans, and I try something different whenever I can.I use molasses and some onion with my beans, and usually throw in other things, like a little dried mustard, different kinds of peppers chopped fine, and anything that seems like it will work.
Soups are a great thing to make in the winter, and this year,I'm going to try some new things with that. I've had some soups in Canada, made by those French Canadians that were fantastic. I'm putting in a new wood stove this year, and it has a great cooking surface, and I'm hoping I can refine my soups a little better.
One other thing that I make myself is bread. There is a website called "Zoe Bakes" where she gives you her artisan bread instructions. It comes out really good, and I have used her dough method for pizza crust also.
You will notice a change in the way you feel when you cut the corporate meat out of your diet.

Mmmmmm the soups sound yummy. Do you
use a vegetable base?

Yes vegetable base.I like to try different things, but I usually throw in some rice or barley. I really like the taste of celery in a soup,so I usually throw some of that in at the end. The hardest part for me is keeping a nice clear base. My mother has been making soup for around fifty years, and she gives me pointers, but mine never come out as good as hers!! I can make pretty good bread, and my cider never stays for long...

Vegan is tough to do. I have many friends that are either Vegan or Vegetation and I don't know how the vegans eat and survive. I could never do Vegan.

I would say start enjoying Curry and find all the curry dishes you can. Also, if you can find the right type of tofu, it's not bad. Silken is nasty but I have found some spiced tofu that is really good. Might want to look at Chipotle's sofrita tofu. It's really good and I will often switch between getting steak and the softita's there.
And if done right, eggplant is really good. I am not a fan but I have had friends make it that amazed me with how it tasted and was baked.

it does seem to have many asthetic benefits

most of the vegan females I have seen have great skin and are petite and toned,,,

vegan males tend to seem to be angry all the time,,lol,,in my experience anyway

Couple years ago, after a trip to the hospital,Doc asked me how I wanted to go. I said a comet in the back of the head. She said how about blind,no feet and looking for a kidney. Changed my diet and lost 50# and 10in. off my waist in about 6mo. Lots of fiber and no sugar..start every day with bran flakes and 2% milk..raw veggies, beans, fruit and fish are my mainstay. Still 185# and 34in.waist...this can be done.happy

I am going to try and eat more vegetarian meals and try to limit meat to two or three meals a week at most. I work second shift though so I don't want to spend a lot of time preparing a meal which is why I purchase an electric pressure cooker. Since I am just starting out on eating a more vegetarian diet and I am going with some of the fast and easy options like veggie burgers, beans, rice and frozen or canned veggies. The canned veggies I buy packed in water and then I rinse them before cooking to get rid of any excess salt and preservatives. I wish there were more options in the frozen food section for vegetarians. I am thinking there probably are and I am just not aware of them yet. I want to stick to things I enjoy eating, for instance I don't care for brown rice I prefer white rice. Another example is I like white potatoes much better than sweet potatoes. If I force myself to eat something I don't really like, or don't care to eat very often, I won't stick with this new way of eating. I don't want to set myself up for failure. So I am trying to set myself up for success.

My daughter as well as a niece are vegetarian. I have found quite a few recipes on Pinterest that they both love. Veggie wraps, sauteed veggies with Couscous, white bean chili and some not so healthy like mock chicken sliders. My niece had been vegetarian for years when she decided to go vegan and was hospitalized a yr later. Apparently you can have too much tofu..lol

my niece does

she doesnt include herself in the 'animals' byproduct where it concerns her babies and the natural milk she produces for them
