Chorizo is a Spanish sausage which is nothing like the Mexican chorizo usually found in ethnic food sections in American markets. In Texas, some meat markets make their own chorizo which is nothing like the Spanish or Mexican varieties.
The Spanish style is a hard link sausage similar to salami but with a much different flavor. The Mexican style is mushy, comes in a plastic tube, and is usually made from lymph nodes (the pork kind is hard to find!). The Texan style is made from pork and looks like highly seasoned chili grind meat. I felt like experimenting so I browned about a cup of Texas Chorizo in a saute pan pouring off the grease. I then added about a cup of broccoli and a cup of Brussels sprouts to steam. I then added about a third cup each of mozzarella, pepper jack, and triple cream German mushroom cheese to the mix and let it melt. The concoction was then stirred well and gave a side dish that had intense flavor and was rich enough for a main course. It was really, really, good! |

That does sound good. : ) My favorite Spanish chorizo preparation is to dice it, sauté in olive oil, add some fresh clams, dry sherry and butter, maybe some minced chives if you're feeling fancy. Stolen from my last job and shared with you folks.

When I used to eat other meats (only eat fish and seafood now and have done for almost six years now), I used to use chorizo when I made jambalaya. Being in Europe, chorizo is readily available in the UK.
