I've got some news. Galendgirl (a mingler) is moving to Texas. She came to Houston and ate a mess of ribs bigger than her head! She had never heard of a Kolache or Boudin but did manage to suck the head of a crawfish. She now understands the joy of a fried pie and chicken fried steak.
