CHICKEN ENCHILADA VERDE

4 boneless skinless chicken breasts
2 cans of chicken broth
1 15 oz can of green Chile sauce
1 8 oz can of green Chile sauce
1 small can of diced green chilies (drained)
¾ cup of salsa Verde
2 cup of shredded Monterey jack cheese
1 cup of shredded pepper jack cheese
1 cup shredded of sharp cheddar cheese
1 cup diced red onions
salt and white pepper to taste
12 large flour tortillas
1 cup of sour cream
1 15 oz can of black olives diced

Preheat oven 350 degrees.
Trim off any excess fat or skin off of chicken breasts. Wash thoroughly and place chicken in a deep pan with chicken broth and water. Add salt and pepper. Bring to a boil then down to a simmer. Cover with lid and let cook till chicken is easy to shred with fork.
Strain the broth, place in a container in the frig or freeze.
Shred chicken with fork and set aside. Combine all cheeses and onion in a small bowl.
Open small can of green Chile sauce and pour on bottom of glass baking dish. Fill each tortilla with shredded chicken, diced green chilies, cheeses, onion, and top with 1 tablespoon of green Chile sauce. Reserve half the cheese and onion combination.
Roll tortillas and place in baking dish seam side down. Take remaining green chili sauce and thoroughly pour over all. Top with remaining cheeses, onion. Add the salsa Veda, and black olives.
Bake in 350 degree oven for 20-25 min or until heated through and cheese has melted. Let stand 5 minutes. Top with sour cream or your favorite hot sauce.
Note: If needed you may have to grate more cheese depending on how much cheese you like.

You never heard of smoked salmon. It is one of my very most favorite foods. If you like salmon, some people do not. But you should try it. I would think piggy would have it. Or if you have a Sam's club. Give it A try.

I like BLT's, but with melted cheese. happy happy

Fix eggs with cream then add the white extra sharp cheddar cheese, fold in then plate. Then just lay the cold sliced smoked salmon on it and enjoy. I had a few years overseas in Europe. My Grandfather would eat his all the time. :banana: :banana: :banana: :banana: :banana:

SALMON CROQUETTES

1 1/2 lb. can red salmon, skinned, boned, drained
1/2 cup of coarse cheddar cheese cracker crumbs
1/2 cup of ricer mashed potatoes
2 eggs, well beaten
1/4 cup of warm milk
1 sm. onion, chopped finely
2 green onions green parts only
1/2 tsp of cayenne pepper
1/2 tsp of garlic powder
1/2 tsp of old bay seasonings
1 jalapeno pepper diced fine
1 small can of diced green chilies
1 tbsp. parsley, chopped finely
2 tsp. lemon juice
3/4 tsp. Tabasco sauce
1/2 tsp. sea salt
1 cup of corn flakes or bread crumbs or bran flakes

Drain liquid from salmon.

Mix salmon with lemon juice in bowl; combine cracker crumbs and well beaten eggs together to soften crumbs; add to salmon, add remaining ingredients.

Form into croquettes about 2 1/2 inches in diameter.

Roll croquettes in corn flakes or bread crumbs or bran flakes. Place on greased baking sheets.

Bake 400 degrees for 20 to 25 minutes or until golden brown.

I do believe there are many cook's on this site. I do like to cook, everyday. I made them about a month ago. People said they liked them. I did.laugh laugh laugh laugh laugh

Yeah there is several on here that cooks have had the pleasure of meeting at a get together we had and believe me he smoked the best ribs & brisket I believe I have ever had...drool

I like to cook ribs. I like to cook chili in ever way. Make a salsa that some think I should market. But there are so many out here now, that they all seem to think is the best.
I would rather just like what I like and my friends like.

Besides it is personal to me that people enjoy the food. The fact that the food disappears from the plate is the best.

You have the same situation of getting to eat food that someone prepared with love. No recipe ever would take the place of that. :wink:
