Good morning
Does anyone have a good chicken recipe. I would like to make either a casserole dish or maybe even some chicken parm or marsala. Any suggestions or recipes would be great. Just want something different. Have a great day! |

Just want something different. Have a great day! Chicken - PO-PIE... Ingredients: 1 medium chicken or 4 chicken breast halves, boned 5 tablespoons all-purpose flour salt and pepper, to taste 2 hard-boiled eggs diced pimiento butter . Pie Crust: 1 cup flour 4 tablespoons shortening 1/2 teaspoon salt 4 tablespoons cold water Preparation: Cover chicken with boiling water. Cover; simmer until very tender. Cool chicken in liquid. Remove skin and bones. Thicken liquid with flour and season with salt and pepper. Place chicken in a baking dish; add cut-up eggs and pimientos. Cover with thickened broth. Crust: Sift flour with salt; cut in shortening. Add water a little at a time; toss lightly with a fork. Roll out; place on top of the chicken mixture. Cut vents to allow steam to escape. Bake at 350° for 30 to 45 minutes or until brown. |

Place in casserole dish, season with: Black pepper, salt, Garlic or garlic powder I can... Cream of chicken soup +(1/2 can of water) In skillet.. 2 TBSP Butter or Margarine... Break up 1/4 lb. Saltine Crackers in Skillet, cook until all of the butter is absorbed.. Scatter on top of casserole... Brown in pre-heated oven 30 min @ 350 deg. Enjoy |

I don't know what you'd call it but it taste good, lol
1 small box of thin spaghetti 3 cups of chicken, cut into chunks 1 jar of Alfredo sauce 1/3 cup of half/half 3 oz cream cheese cut in to chunks 3 cups of frozen chopped broccoli 1/2 cup of mushrooms 1 cup of cheddar cheese salt and pepper to taste Cook spaghetti according to package. During last 2 minutes of cooking spaghetti, add frozen broccoli. While spaghetti is cooking, cook the chicken. In a bowl, mix together Alfredo sauce, half/half/ and cream cheese just enough until the Alfredo sauce and half/half is mixed together (don't worry about getting the cream cheese mixed in well). Add to chicken and heat till cream cheese is melted. Add spaghetti/broccoli mixture and mushrooms. Heat for about 2-3 minutes. Add salt and pepper to taste. Sprinkle cheddar cheese on top. I loved it and my picky eater daughter loved it too. |

My Mom makes this Chicken Casserole and everyone in my house loves it. It may not be refined enough for what you are looking for. Probably not very good for you either. I'm sure it will probably kill you but it is DELICIOUS.
Boil 1 whole chicken until fork tender. Drain and cool. Prepare 2 boxes Stove Top Stuffing according to direction. Remove bones from chicken and shred into bite size peices. Place chicken in bottom of large Pyrex casserole dish. Pour 2 cans of Cream of Chicken over chicken and cover w/prepared Stove Top Stuffing (Spread evenly). Pour one jar of Chicken Gravy over the Stove Top. Bake until bubbly. |

Thanks guys! All of these recipes sound soooo good. Thanks for some great ideas. If anyone else out there have suggestions, please advise. Want to get a variety of ideas to choose from as I have very picky eaters. Thanks again!

Boneless Buffalo wings
3 Tablespoons nonfat buttermilk 3 Tablespoons Hot pepper sauce (I use Franks Red Hot) 3 Tablespoons distilled white vinegar (divided) 2 lbs Chicken Tenders (I buy boneless skinless chicken breasts and slice them up) 6 Tablespoons Flour 6 Tablespoons Cornmeal 1/2 teaspoon Cayenne pepper 2 Tablespoons oil (I use olive oil, and I always end up using more) 1. Whisk buttermilk, 2 Tablespoons hot pepper sauce and 2 Tablespoons Vinegar in a large bolw until combined. Add Chicken, toss to coat. Marinate in refrigerator at least 10 minutes or up to an hour, stirring occasionally. 2. Whisk flour and cornmeal in a shallow dish. @hisk the remaining 1 Tablespoon hot sauce and 1 Tablespoon Vinegar in a small bowl. 3. Remove chicken from the marinade and roll in the flour mixture until evenly coated. Discard remaining marinade and flour mixtures. Sprinkle both sides of chicken with the cayenne. $. Heat Oil in a large nonstick skillet over medium high heat. Add half the chicken and cook until golden brown and cooked through. 3-4 minutes per side. Repeat until all the chicken is cooked. Transfer to a platter and drizzle the chicken with the reserved hot sauce mixture. Serve with blue cheese or ranch dressing. |

Chicken strips
Sweet and sour dressing, not poppyseed. ginger corn flake crumbs salt and pepper Marinate the chicken strips for 30 to 60 minutes, dredge in corn flake crumbs, sprinkled with ginger, salt, and pepper. Bake in oven 375...for twenty minutes, with non stick spray. My son adores this and eats the chicken like crazy. No dip is needed. |

This recipe is soooooooo easy...and the flavor is soooooo enormous!
Asian Lime Chicken: whole chicken - splitting it down the breasts, keeping the chicken together....wash. (you can use any part of the chicken actually but I prefer to use the whole chicken) add ingredients in this order. Lime Soy Sauce - any asian brand works salt msg (Monosodium glutamate) add the juice of a lime - making sure you cover the entire chicken...if no lime use lemon..if lemon use vinegar then add soy sauce - making sure you cover the entire chicken add salt msg - do the 'pinch your fingers together' and just sprinkle it very lightly over the chicken. *optional pepper flakes thats it...let it marinate for at least 15 mins...then cook in oven. do not over cook it in the oven, do not cover the chicken while its in the oven. you want this to be moist, so check it periodically to make sure you dont over cook it. let the lime acids go to work and with the soy sauce flavoring.....you will know what Im talking about when you take your first bite...simple ingredients with a big flavor. *for those who like hot spicy food, add dehydrated red pepper flakes |

Chicken and brocolli alfredo
(please keep in mind these are estimates b/c I don't cook with recipes) 2-3 boneless chicken breast 1 head of brocolli 1/2 - 1 lb of favorite pasta 1 small can of evaporated milk 4-6 tablespoons of butter/margarine 1/2 cup of parm cheese 3 tablespoons of flour 1/4 milk (optional) Salt, pepper, garlic or any other seasonings to taste. Cook pasta per directions on box. Take 2-3 boneless chicken breast. Cook until white. Cut up in bite size piece. (I usually do this with the spacula as I am cooking it.) In a med pot, add evaporated milk, butter, parm, flour and milk. Cook on low until combine and a slightly thicker consistancy. Add it to the pan with the chicken and add cut up pieces of brocolli. Cook on med-low the chicken, broccolli and sauce. Once brocolli is tender add cooked pasta. Mix and serve. |

Usually I get me about 4 skinless boneless breast and make a white sauce with capers and dump it over the breasts
