I know I should eat spinach more often, but I don't really like it. A friend of mine will put it in things like spaghetti or other dishes where you can't taste it so those who don't like it will actually eat it.

Good for this season.

Tortellini simmer in chix broth. In individual serving bowls add fresh spinach leaves. Ladle broth & tortellini into each and add fresh grated Parmesan on top. Serve with garlic toast.

SPINACH DIP

1 (10 oz.) pkg. frozen chopped spinach, thawed (do not use fresh)
1 1/2 c. sour cream
1 c. mayonnaise
1 (4 oz.) pkg. dry vegetable soup mix
3 green onions, finely chopped
Loaf of crusty bread

Squeeze spinach until dry. In medium bowl, stir together spinach, sour cream and soup mix. Add finely chopped green onions. Cover and refrigerate 2 hours or overnight. Cut slice from top of round loaf of bread, hollow out loaf to leave shell to contain dip. Use bread removed from shell and top slice to cut into bite size pieces. Bake in 350 degree oven for 15minutes or until bread and pieces are slightly golden. Fill loaf with dip and place on platter and surround with bread pieces and variety of raw vegetables. After the dip is eaten, enjoy the dip soaked bread shell as well.

You can use most any round loaf of crusty bread for this. I like using a loaf of roasted garlic astisan bread from WalMart. You can also use those round loaves of Hawaiin sweet bread.

I love spinach.

I like to make salads with raw spinach. I add either cut up strawberries or dried cranberries. Sometimes I add sunflower seeds to it. Adding shredded cheese or cut up chicken to it is good too.

I like cut up boiled egg in cooked spinach.

I love creamed spinach.

i wonder why spinach is so spendy... 4 bucks here and it cooks down to nothing lol.... i hate canned spinach.. love it fresh cooked and raw though

kinda poached/blanched in water with a touch of salt and pepper

i moreless steam it while i retain the flavor so it does not get soggy. I use a metal steam device and hover the spinach over the boling h2o

just the other day i made greek spinach cheese pie and it turned out so good let me know if you want the reciepe. it's really healthy, yummy, and easy.

Chop it and throw it in quiche.

Brown some bacon bits, remove from pan and pour off excess grease. Saute some onions till translucent then add the spinach and lightly saute. Mushrooms can be good in this as well.



This is my favorite spinach recipe of all time. Greeks have some of the best food in the world I think. It is savory, buttery and the crust is amazingly flaky.

Spanakopita (Greek Spinach Pie)

INGREDIENTS (Nutrition)

* 3 tablespoons olive oil
* 1 large onion, chopped
* 1 bunch green onions, chopped
* 2 cloves garlic, minced
* 2 pounds spinach, rinsed and chopped
* 1/2 cup chopped fresh parsley
* 2 eggs, lightly beaten
* 1/2 cup ricotta cheese
* 1 cup crumbled feta cheese
* 8 sheets phyllo dough
* 1/4 cup olive oil
Note: I double the feta...well in truth I cook by feel not by recipe but this is close to what I do.

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
2. Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
3. In a medium bowl, mix together eggs, ricotta, and feta. Stir in spinach mixture. Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. Lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling.
4. Bake in preheated oven for 30 to 40 minutes, until golden brown. Cut into squares and serve while hot.

I like it best raw. In salads, in sandwiches, in tacos. If I have to have it cooked, minced up in rice dishes, lasagnia, pasta sauce.

Raw - In a tortilla wrap or in a salad.



Cooked with lots of salt and butter.


Also great on pizza, with white sauce and feta cheese.

Take some ground lamb and make Lamb-Burgers! Top with Spinach, fresh tomato, and some Feta or goat cheese.

And Spanikopita is always a fave too...

Mmmm! I love me some Greek food!
