1 frozen bag of spinach
1/3 cup olive oil...NO POPEYE !
2 cloves of crushed garlic
red pepper flakes
parmesian cheese
salt to taste

1/4 cup of butter

3 tblsp of oil

Spinach

1/2 cup garlic sliced


lightly oil pan with oil, add spinach and garlic as it reduces add butter.

season with salt n pepper and serve.

Potato and Sausage Soup with Spinach

Have you ever had the potato soup at Olive Garden? Well after eating that, I came up with my soup recipe. My children hate spinach, but love the soup!

Potatoes
Chicken Broth
Mild Italian Sausage browned and drained (reserve 2 TBSP drippings)
White Pepper
1 small box chopped spinach thawed and drained

Peel and slice the potatoes, add to the broth and cook on high until boiling, then lower to a simmer.
Cook the sausage, breaking into pieces. Add to the broth along with the reserved drippings.
Add white pepper

10 minutes before serving, add the spinach to the soup and allow to warm through.

This is great with garlic toast or crunchy french bread

drop fresh spinach into any pot of soup or broth (canned or homemade) the last few mins of cooking...add it to a salad or just by itself...throw some into lasagna or any pasta dish...my kids would rather have spinach leaves on a sandwich than lettuce leaves...it's really good wilted by warming a sweet and sour salad dressing and pouring over the spinach add some bacon and sweet or green onions and it's to die for...enjoy!!! your body will thank you
