I am from California but I did have a chance to vacation down to Louisiana for a couple weeks. I did the obligatory scouting out of New Orleans for a couple days but then moved up into Cajun country for the rest of the time I was there. Yes I must agree it was some of the best food I had ever tried. Of course a lot of it is not exactly what I would refer to as "healthy" but there are some wonderful vegetable dishes also.

I don't eat blueberry corncakes but I don't mind cooking stuff I don't eat. Partly because I'm such a picky eater that I don't expect anyone to live on what I eat.
My one anwser to southern food not exactly being healthy? I'm going to die anyways so I might as well die eating some good food! ![]() |

You have to also realize I’m from California and wasn't quite prepared for all the grease and lard. I did sample just about everything put in front of me and I liked a good portion of it. It was just not what I was accustomed is all. I guess I should have clarified that statement. I really liked crawdads though and many of the seafood dishes I tried. |

I think moderation is the key here also. By the time I left the South, I felt like I'd had enough of that particular style of eating. Now would I try it again? Absolutely. Could I live on it? No.

its true that alot of southern food is fried. but im a diffrent style southern. i dont fry very much. i bake abnd boil and sautee alot. very little of what i cook if what you would really call fried.

Right. Some of my preferred dishes that I tried were boiled. I think the frying is hard for me to digest also for some reason. I LOVED the collard greens and the vegetables though. Yumm. ![]() |

i throw alot of culture into my cooking,, asian, mexican, creole, and itailian. my prefered method of cooking is country though. my mom and great grandmother taught me what it was all about. to me, food and the look on someones face when they bite into something thats fresh and good is all the reward for the hard work.
