Crawfish Etouffee
Ingredients:
1 lb. crawfish tails(peeled)
1 stick margarine
1 Tablespoon paprika
1-1/2 teaspoons salt
1/2 teaspoon pepper
1 medium onion(chopped)
1/2 bell pepper(chopped)
2 cloves garlic(minced)
3 drops Tabasco
2 cups water
2 teaspoons cornstarch
2 bay leaves
Parsley

Directions:
Melt margarine in deep, thick aluminum frying pan.(Do not use cast iron
pot.) Add crawfish tails to margarine. Season with paprika, salt and
pepper. Simmer 2-3 minutes. Remove crawfish from margarine. Set aside.
Add onion, bell pepper, garlic and Tabasco to pot used to cook crawfish.
Saute 10 minutes. Return crawfish to pot. Add water. Simmer 5
minutes.remove 1/2 cup liquid from pot. Blend cornstarch into liquid.
Return to pot. Add bay leaves. Cover and simmer 10-12 minutes or until
crawfish tails are tender. Remove bay leaves. Sprinkle with parsley.

Serves 4. Serve over hot rice.

I usually use boiled crawfish that has been cooked in crab-boil. And
after I dehead and peel the crawfish, I boil the head and shells in
water to get a nice broth in place of plain water. So my crawfish
etouffee can be quite spicy.

On their first visit to the modern world, an Amish boy and his father
were visiting a mall. They were amazed by almost everything they saw,
but especially by two shiny, silver walls that could move apart and back
together again.

The boy asked his father, "What is this, Father?"

The father [never having seen an elevator] responded "Son, I have never
seen anything like this in my life, I don't know what it is."

While the boy and his father were watching wide-eyed, an old lady in a
wheel chair rolled up to the moving walls and pressed a button. The
walls opened and the lady rolled between them into a small room.

The walls closed and the boy and his father watched small circles of
lights with numbers above the walls light up. They continued to watch
the circles light up in the reverse direction.

The walls opened up again and a beautiful 24-year-old woman stepped out.

The father said to his son, "Go get your mother."

A man was driving home from work one evening whenhe suddenly realized
that it was his daughter's birthday and he hadn't yet bought her a gift.
So, the man rushed off to the nearest toy store and asked the sales
clerk, "How much is that Barbie in the window?"

The sales clerk replied in a condescending tone, "Which Barbie? We have
Barbie Goes to the Gym for $19.95, Barbie Goes to the Ball for $19.95,
Barbie Goes Shopping for $19.95, Barbie Goes to the Beach for $19.95,
Barbie Goes Nightclubing for $19.95, and Divorced Barbie for $265.00."

The overwhelmed man asked, "Why is the Divorced Barbie $265.00 and all
the others are only $19.95?"

"That's obvious!" said the sales clerk. "Divorce Barbie comes with Ken's
house, Ken's car, Ken's boat, and Ken's furniture.

Okay the Jamaican Rum Punch is ready, here is the list of what is in it
enjoy!

Scale ingredients to servings
1 cup 151 rum
1/2 cup dark rum
1/4 cup coconut rum
2 1/2 cups pineapple juice
2 1/2 cups orange juice
1/4 cup lime juice
3 tbsp grenadine syrup
ice cubes

Mix all ingredients together in a blender or punch bowl. Pour over ice
cubes in any type of glass.

Enjoy!

Alligator Balls Recipe

1 lb Chopped alligator meat
1 Egg
1 tb Finely chopped onions
1 tb Finely chopped celery
1 tb Finely chopped parsley
2 tb Finely chopped shallots
2 ts Lemon pepper
1/2 ts Salt
1/4 c Bread crumbs
1 c Cooking oil
Flour to dredge

Combine all ingredients, form 1 inch diameter balls, allow to set one
hour. Dredge in flour and fry till brown. Serve hot.

I love you all......if that scares you go ahead and run. I have a love
of all people. Okay now run faster if you going to run everytime the
word love comes up, because it is often used to describe the many
different ways we feel about people. You love your parents one way, you
love a friend another, you your children another, your home another,
your pet another, etc..

Purplecat, you sound like you need to take yourself out on a date. Get
out of the house, go have dinner or to a movie. Decide which day or
night, then go through the routine of preparing for a date. Tell
yourself you are going to have fun and just do it. Why think inside of
the box that you can only have a date if it is with someone else? Get to
know yourself and the places you like on your own. You might meet
someone out there, or you might just have a nice night without the
anxiety of whether you should invite someone in or not. Start thinking
as me, myself, and I, instead of how lonesome I am.

Big hug, kiss, and may you discover something new about yourself, that
you can be fun to be with even by yourself.

For those who want something that is cool and refreshing during the
summer months. Here is a one from Weight Watchers:

Frozen Mango-Lime Mousse

The tropical flavors of mango and lime make this the perfect
choice to follow a spicy Mexican or Caribbean entree.

Makes 4 Servings

2 medium mangoes (10 ounces each), pared, pitted and cut
into 1/2" cubes
1/2 cup part-skim ricotta cheese
1/4 cup granulated sugar
2 tablespoons fresh lime juice
1 teaspoon grated lime zest
1 envelope unflavored gelatin
1 cup low-fat (1%) milk

In food processor or blender, combine mangoes, ricotta
cheese, sugar, juice and the zest.
Meanwhile, sprinkle gelatin over 1/4 cup cold water; let
stand 2 minutes, until softened. Pour into food processor.
In small saucepan, bring milk to a boil. Pour into food
processor; puree until smooth.
Into each of four 8-ounce freezer-safe dishes pour one-
fourth of the mango mixture; cover with plastic wrap.
Freeze about 2 hours, until set.

EACH SERVING PROVIDES: 1/4 Milk, 1 1/4 Fruits, 1/2
Protein, 45 Optional Calories

PER SERVING: 189 Calories, 8 g Protein, 3 g Fat, 35 g
Carbohydrate, 75 mg Sodium, 12 mg Cholesterol, 1 g Dietary
Fiber

Lola a beautiful Mexican girl fell in love with Chico and wanted to
marry him. She finally decided to tell her papa to wed her to Chico.

Papa felt uncomfortable and told her, "Daughter Lola, please find
another one. Your Mother does not know this, but Chico is related to you
as half-brother."

So Lola cried and soon found another boy Enrico to marry. Again Papa
felt uncomfortable and told her, "Daughter Lola, please find yet another
one. Your Mother does not know this, but Enrico is also related to you
as half-brother."

Whimpering Lola went to her mama. Wise Mama comforted and advised her,
"Darling daughter Lola, do what makes you happy. Marry Chico or Enrico,
your Father does not know this, but you are not related to Papa."

To have belief to have hope, and to have hope is to have faith. We are
all different with a different set of beliefs. Some believe in God,
which is called many different names depending upon which religion you
follow. Some believe in their higher power, whether they are atheist or
not. Some believe in the universe. When we take a look at our basic set
of laws that we follow, the same that have been followed centuries, and
most of this law are written in the bible as commandments. The question
should be, why is their so much separation in this world, when we
basically follow the same set of rules!
