First Course
Quill variation with foie-gras.

Warm Stilton & Walnut Tart
with Pear & Watercress salad


Soup
Mushroom consommé with vegetable celestine.

Hot Starter
Salmon roulade with pulpo carpaccio and artichokes.


Main Course

Florentine ~ Smoked Salmon, Sautéed Garlic Spinach,
Poached Egg & Hollandaise Sauce on top of an English Muffin
Lamb with potato puree and sweetbread-bean ragout.

Dessert
Vanilla mascarpone and raspberry mousse duet with pistachio ice-cream.


Arabic Menu - Rober Salloum (For Gourmets)

Crusted hallwayo fish with coriander and tomato sesame with mmajhous rice.

The Hallwayo fish fillet is marinaded with lemon juice, olive oil, and a masala of original spices
Encrusted with a sambal oelek, cumin and lemon zest topping, it is then baked in the oven
The dish will be served with aromatic yellow rice, pickled lemon and a spicy tomato sauce



Appetiser
Lucindale confit halibut, baby cos herb salad with Italian dressing.

The fresh halibut is poached in a Lucindale white wine stock, marrying beautifully with the full flavour of the fish
The chocolate ball shell dessert contains a texture sensation of milk chocolate mousse and baked crumble with macadamia nuts, topped with a small ladle of the hot chocolate butterscotch sauce

Norwegian salmon royal with a capsicum espuma.

Fricassee of Temple Farm Chicken with Sauté Wild Mushrooms, Champagne Sauce, New Potatoes & Panache of Gren Vegetables
