I noticed that some profiles have a place for testimonials. Why do some profiles have it and others do not? Or, am I missing something..? Thanks.

I think its an option you have to "allow". Along with 'showing' your friends. Look in the "edit Profile" screen.

First, they must be on your Friends list to be able to write a testimonial for you and vice versa. Then as Tom said, you need to check that box on your 'Edit Profile' that allows Testimonials (and/or your Friends list) to be shown.
