What are your New Years Foods or recipes?


Been a standard since I was 8 years old.

NEW YEARS BLACK EYED PEAS

1 Cup of black eyed peas
1 med. Red onion, chopped
2 cloves garlic, minced
1 yellow bell pepper, chopped
1 red bell pepper, chopped
2 c. (1 lg. can) whole tomatoes, chopped
3 tbsp. Butter Buds
1 tbsp. Worcestershire sauce
1 tbsp. of red chili powder
1 tsp. of grounded cumin
Pepper to taste

Wash black-eyed peas; cover with water (4 cups) and soak overnight (or bring to boil - boil 3 minutes and let stand 1 hour). Drain and throw away soak water.

Cover peas with fresh water and boil gently until tender. Drain.

While peas are cooking; sauté onion, peppers, and garlic in Butter Buds for 5 minutes.

Combine in the tomatoes and seasoning's; simmer 3/4 to 1 hour. Combine with black-eyed peas and reheat.

*****I combine in some diced jalapenos, or green chilies just to spice it up to a south western style. *****

BLACK AND WHITE BEAN SALAD

1 (15 oz.) can Great Northern beans, rinsed and drained
1 (15 oz.) can black beans, rinsed and drained
1 1/4 cup of peeled, seeded and chopped tomato
3/4 cup of diced red pepper
3/4 cup of diced yellow pepper
3/4 cup of thinly sliced green onions
1/2 cup of home made salsa
1/4 cup of red wine vinegar
2 tbsp. chopped fresh cilantro
1/4 tsp. sea salt
1/8 tsp. ground pepper
8 to 10 c. finely shredded romaine lettuce

Combine white beans, black beans and chopped tomato in large bowl, mixing gently. Add peppers and green onions, stir gently to combine. Set bean mixture aside.
Combine salsa, vinegar, cilantro, salt and pepper in a small bowl; stir with a whisk until well blended. Pour over bean mixture and toss gently. Line a large serving bowl with shredded lettuce; top with bean mixture. Chill for about 2 hours.

GRAMS EGGNOG

12 eggs separated
1 cup of sugar for egg yolks. Plus a cup of sugar for egg whites
1 1/2 cup of rum
1 1/2 cup of brandy
2 tbsp of vanilla
6 cups of whole milk
ground nutmeg for garnish
1 pint of heavy cream

Beat egg yolks with sugar on low speed in a large bowl until mixed. At high speed, beat until thick and lemon-colored (about fifteen minutes).

Combine in the alcohol, one tablespoon at a time, to mixture. Cover and chill.

In the meantime, chill a 5-6 quart punch bowl. About twenty minutes before you will be serving your eggnog, stir the yolk mixture, milk, vanilla, and 1 1/4 tsp. nutmeg in the bowl.

In another large bowl beat egg whites at high speed until soft peaks form. Slowly adding the sugar, while beat the egg whites.

In a smaller bowl (you can use the same beaters), beat cream at medium speed until stiff peaks form.

Using a whisk, gently fold egg whites, cream, and yolk mixture just until blended. Serve cold (no ice).

MINE CHEDDAR BEER CHEESE SOUP

1/2 cup of white flour
1/3 cup of unsalted butter
1 garlic clove, pressed
1 tbsp. of grated red onion
1 tbsp of grated carrot
1 tsp. of Worcestershire sauce
1/2 tsp. sea salt
Pinch of white pepper
1/2 tsp. of dry mustard
3 cups of chicken broth
1 1/2 cup of Half & Half
1 can of warm beer
16 oz. shredded extra sharp cheddar cheese

Melt butter. Stir in flour. Cook stirring constantly until smooth. Combine in the garlic, onion, carrot, Worcestershire sauce, salt, mustard and pepper. Blend well with a whisk. Gradually stir in chicken broth, Half & Half and beer. Whisk till the blended well. Cook until thickened. Combine in the shredded cheese and stir until melted, DO NOT BOIL.

ROASTED RED POTATOES

10 red potatoes, skin on and quartered
4 tbsp of olive oil
4 tbsp of butter
1/2 tsp of sea salt
1/2 tsp of seasoning salt
1 tsp of paprika
1 tsp of freshly ground black pepper
1 tsp of garlic powder
1 tsp of onion powder
3 cloves fresh garlic (finely minced)
2 tsp of dried rosemary or 2-3 sprigs of fresh rosemary off stem and minced

Preheat oven to 375°F.

In a sauce pan on low heat; cooking the olive oil and butter together, whisk till well blended.

Combine in with the olive oil and butter, salts, pepper, garlic powder, paprika, minced garlic, onion powder, and rosemary. Whisk the ingredients until well combined. Place in a medium sized mixing bowl.

Quarter the red potatoes with the skin on, and then toss in the bowl with the warm sauce until evenly coated. Let the seasoned potatoes sit for a 10 minutes in the bowl.
Transfer the seasoned red potatoes to a non stick baking dish or a baking sheet covered with aluminium foil.
Place in oven for about 35 to 40 minutes or until golden brown and tender.

ARTICHOKE SPINACH DIP

2/3 cup Parmesan cheese
1 14 oz. can artichoke hearts
2/3 cup real mayonnaise
1 8 oz cream cheese
1 tablespoon pimiento peppers, chopped
2 tablespoons green onion, thinly sliced
1 clove garlic, pressed
1/2 teaspoon red pepper flakes
1 tsp of paprika
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon of lime juice
1 frozen package of spinach

Preheat oven to 325 degrees F.

Grease a medium sized casserole dish or spray with olive oil spray.

Combine cheese, mayonnaise and cream cheese.

Put garlic clove through a garlic press and stir in.

Drain and chop artichokes, spinach and stir in along with the pimientos, onions, red pepper flakes, olive oil and lemon juice, and lime juice.

Pour into baking dish, top with bread crumbs.

Bake 25 minutes or until golden.

1 (1 lb.) bag marshmallows
1/2 cup of whole milk
1/4 cup of green crème de menthe liqueur
3 tbsp. of white crème de cocoa liqueur
1 1/2 cup of whipping cream, whipped (or one 8 oz. container Cool Whip)
8 ounces of melted chocolate
1 (9 inch) chocolate graham cracker crust

Melt chocolate in the microwave; pour into chocolate graham cracker crust. Place in the refrigerator to firm up.

Melt marshmallows in milk (can be done in microwave). When completely cool, fold into whipped cream. Blend in liqueurs

Pour and scrape mixture into crust. Freeze until firm.

Garnished with whipped cream, and shaved chocolate.

If you wish you can temp the eggs to 160 degrees.

I have been making this for many years so far I have not gotten sick from it.

None of my friends that I share it with, have not gotten sick from it.

Precautions are always good to do.

I can say the alcohol does not kill bacteria.

So please take your cautions when preparing the Eggnog.

It is very tasty indeed. Also prepare this recipe for St. Patrick's Day.
