PUMPKIN SEED BREAD 2 cups of white sugar 1 cup of light brown sugar 1 cup of oil 4 eggs 1 29 oz. can of pumpkin 3 1/2 cups of flour 2 tsp of baking soda 1 tsp sea salt 1 tsp of baking powder 1 tbsp of cinnamon 2 tsp of allspice 1 tsp of nutmeg 2 tsp of ground cloves 12 oz bag of roasted pumpkin seeds Combine sugars and oil in large bowl with electric mixer; beat in eggs one at a time. Beat in pumpkin and 2/3 cup water. Mix the flour, soda, salt, baking powder, cinnamon, allspice, nutmeg, and cloves; sift together in a large mixing bowl. Combine the dry with the wet, blend till the ingredients are well combined. Combine in half of the pumpkin seeds with the mixture. Divide batter into 2 greased 9 x 5 inch loaf pans. Use the other half of the pumpkin seeds to decorate the top the loaf with the seeds. Bake at 350 degrees for 1 1/2 hours or until pick inserted in center comes out clean. Let stand 10 minutes. Remove from pans and cool on wire racks. |

4 OF JULY CHEESE DESSERT 11 chocolate graham crackers, finely crushed 1/2 cup of dark brown sugar 1/4 cup of soften un-salted butter 3 beaten eggs 12 oz. of soften cream cheese 1 tbsp of grenadine syrup 1 tbsp of vanilla 1/2 cup of white sugar Combine in the crackers, brown sugar, and butter; press mixture in 8 x 8 inch pan. Beat eggs, cream cheese, vanilla, and white sugar together until smooth. Drop the one tablespoon of grenadine, in the center then swirl the grenadine in with a butter knife blade. Just to make a swirl in the cheese mixture. Fill crust and bake 15 minutes at 375 degrees. Spread one can of blueberry fruit filling over dessert and let set several hours or overnight. Serve with whip cream or ice cream. |

FLAP JACKS 1 cup of warm milk 1 egg beaten 1 1/4 cup of flour Pinch baking powder Pinch sea salt 1 tsp of vanilla Beat milk and egg together. Combine the flour with baking powder and salt and beat again. Mix in vanilla. Have Crisco in frying pan and fry on medium heat. Pour or spoon the mixture into hot oil or grease. Enough batter to forum a 3 to 4 inch cake. Check while cooking for a golden brown color then flip. Cook till a golden brown color. Serve with hot apple sauce or hot cooked apples. |

CHIMICHANGA 1 lg. chicken 2 red onions, chopped 1/3 cup of diced celery 2 diced fine seeded and veins removed jalapenos 1 tsp of garlic powder 1/2 tsp of oregano 1 tsp of sea salt 1/2 tsp. pepper 1/3 cup of green chilies, chopped 4 fresh tomatoes with skin and seeds removed 8 oz. of shredded pepper jack cheese Flour tortillas Simmer 1 large chicken until done, but not mushy. Let chicken cool, remove meat from bones and dice in large bite-size pieces. Fry pieces in a little oil to crisp them a little. Combine in the chopped onions and a lot of celery, diced. Fry together. Combine in the jalapenos, garlic powder, oregano, salt and pepper, more if desired after tasting. Combine in the chopped green chilies and 3 or 4 fresh tomatoes. Turn off heat. Shred the pepper jack cheese. Use flour tortillas that have been at room temperature for some time. Put a generous helping of the chicken mixture on one end of the tortillas; lay cheese across. Roll up and fry in about 1 inch of hot oil. Turn when golden brown and fry sides last. Tuck in sides while rolling up. |
