Very delicious. But make sure you let it get cold. It jsut doesn't taste the same if not.

MY EGG SALAD SANDWICHES

6 hard cooked eggs, chopped
12 slices of crispy cooked bacon
1/2 lb of cooked drain ground sausage
1/2 cup of finely chopped celery
1/3 cup of mayonnaise with horseradish
1 tbsp of diced green chilies
2 tbsp of chopped red onion
1/4 tsp of sea salt
Dash of pepper
12 slices of bread or 6 pita pocket bread

Chopped the cooked bacon into small pieces, combine with cooked sausage. Combine in the chopped celery, and red onion.

Mix in the chopped eggs, season with salt and pepper. Blend in the mayonnaise, and the diced green chilies.

Spread about 1/3 cup egg mixture on half of the bread slices. Top with remaining bread slices. Or stuff into half sliced pita bread.



Hmm...never had egg salad sammiches like this one. May try it, but will lessen the meat stuff. :)

Hello; Red, I do go a little over board on the meat I should of Named it the sausage bacon egg salad sort of.:laughing: :laughing: :laughing: :laughing: :laughing: :laughing: :laughing: :laughing:

To me it does indeed taste wonderful.drinker drinker drinker Hope you enjoy it dear lady. This is the very first time I have ever tried to make it like that. It did turn out to be a left over combination. Strange how necessarily, brings food together. I shared it with others, they to said cut back on the meat. Thank you. flowerforyou Yes, it gets very hot and that usually makes my health issues worse. Thank goodness the beach is only an hour away and I have a nice cool, air conditioned apartment. Not to mention my office is VERY air conditioned...so I don't have to pay for that air 4 days a week! :banana:

JULY 4 MUFFINS

1/2 cup of un-salted butter
1 cup of cane sugar
2 eggs
2 tsp of baking powder
1/2 tsp of baking soda
1 tsp of cinnamon
1 tsp of ginger
2 cups of fresh blueberries
1/2 cup dried cranberries
1/2 cup Macadamia nuts, chopped
2 cups of all-purpose flour, sifted
1/2 cup of warm milk
1/2 tsp of sea salt
2 tsp of sugar (for top)
1 tbsp of vanilla

On low speed of mixer, cream together butter and sugar until light and fluffy. Combine in the eggs, one at a time, and beating well after each addition.

Sift together dry ingredients onto a sheet of wax or parchment paper and gradually add alternately with milk and vanilla. Stir in berries, and the nuts.

Grease a 12-well muffin pan with butter or shortening. Pile batter high in each muffin cup. Sprinkle sugar over tops.

Bake at 375°F oven for 30 minutes. Cool in pan for 30 minutes.

4TH OF JULY PARTY JELLO

LAYER 1:

1 3 oz. pkg. raspberry gelatin
2 cups of boiling water

Dissolve gelatin in water and pour into 9 x 13 inch pan. Chill until firm.

LAYER 2:

1/2 cup of cold water
1 env. of un-flavored gelatin
1 cup of half & half
1 cup of cane sugar
1 8 oz. pkg. cream cheese, softened

Soften gelatin in cold water. Heat the cream and sugar until hot, but not boiling. Combine in the softened gelatin and cream cheese into this very hot mixture and blend in blender until smooth. Pour over the first layer and chill until firm.

LAYER 3:

1 (3 oz.) pkg. raspberry gelatin
1 cup of boiling water
1 16 oz. can blueberries, un-drained

Dissolve gelatin in water. Combine in the un-drained blueberries. Pour over cheese layer and chill.

Top off with red and blue sugar crystals.

4th of July Jell-o Shots
Makes 72 Mini shots or 24-30 regular shots (based on using mini muffin and regular size pans)
1 large blueberry Jell-o Box (prepare according to “fast set” box instructions)
1 large cherry Jell-o Box (prepare according to “fast set” box instructions)
2 14oz cans sweetened condensed milk
2 cups water; divided use
8 single packs of Knox Gelatin, divided use
2 cups of vodka, divided use

Instructions:
Prepare blueberry Jell-o according to “fast set” instructions; set aside. Prepare cherry Jell-o according to “fast set” instructions; set aside.
Measure out ½ cup water into a bowl and sprinkle 2 packets of gelatin on top and allow to bloom for 2-3 minutes. Pour bloomed mixture into a saucepan over low heat. Stir mixture constantly until gelatin dissolves. Remove from heat and pour dissolved gelatin into blueberry Jell-o. Add ½ cup of vodka to blueberry Jello mixture and stir to combine.
Repeat step two for the cherry Jello.
Empty sweetened condensed milk into a bowl; set aside. Measure out 2 cups of water into a large shallow dish like a pie plate. Sprinkle 4 packets of gelatin on top and allow to bloom for about 2-3 minutes. Pour bloomed mixture into a saucepan over low heat. Stir mixture constantly until gelatin dissolves. Remove from heat and pour dissolved gelatin into sweetened condensed milk. Add 1 cup vodka to mixture and stir to combine.
Assembly:
Note: For the mini muffin pans use one teaspoon for each layer. For a regular size muffin pan use one tablespoon for each layer. Keep in mind, that each subsequent layer will need less time to chill and set.
Remove chilled pan from refrigerator. Measure and pour out 1 teaspoon or tablespoon of cherry Jell-o into wells. Transfer to refrigerator and chill for about 7 minutes to set.
Remove pan from refrigerator. Measure and pour 1 teaspoon or tablespoon of sweetened condensed milk on top of cherry layer. Return pan to refrigerator and chill for 5-7 minutes to set.
Remove pan from refrigerator. Measure and pour 1 teaspoon or tablespoon of blueberry Jell-o on top of sweetened condensed milk layer. Return pan to refrigerator and chill for 3-5 minutes to set.
Repeat steps 1-3 until wells are filled.
To remove:
Gently press finger into Jello shots and pull it towards the center away from the walls. Use a finger from your other hand to leverage out the Jello shot.

Awesome, you should also check the allrecipes.com website, they have everything you can think of, I go there sometimes to look at some of the dessert recipes.
