kirk - check your local county and state requirements licensing - that should be your first step
clerk of courts is as good a place to start your inquiry, may even have an online site.

and i am going to have steam wells to keep the food hot outdoors-and if all goes as planned i will upgrade it to a bistro

not sure but the only things I have seen sold out of a cart are hotdogs: pizza: gyros: knishes: not much in any cuisine per se...as you can only keep food hot in water and steam wells, but imagining pasta (not so good)

it depends alot on what kind of food your wanting to sell. If you sell anything grease related, fries, wings, fish, anything deep fried then you have to have a unit equipped with an ensel system, its a system that will put out a grease fire.. very expensive. then you need some sort of water system for sanitary reasons. My advice is to check with your state and local health dept. they will direct you as far as requirements. If your lucky you can pick up a used trailer already equipped for 10000-15000. New- depends on the size and equipment you would need. An ensel system for a dairy queen type of business I had ran about 6000.00-8000.00 only the ensel system. You could be looking at a pretty costly start up.
