you should just be able to season it the way you prefer then throw it in a food dehydrater. ![]() I used the RONCO Food Dehydrator "As Seen on TV" and it works just great! They are only $39 or so at the mall. I think you can jerk about anything, just as long as there is NO FAT and you can slice about 1/8" thick. Soak it 10 minutes in 16oz of Soy Sauce & 1 small bottle of liquid smoke. Enjoy. |

Cut into thin strips and soak over night in salt water to help pull all the blood out.
As far as a maranade, use wrights liquid smoke, soy sauce and hot sauce, all in equal parts. Soak over night in fridge, mixing up from time to time to make sure all strips are exposed. Place in oven or dehydrator, sprinkle on garlic salt and lemon pepper seasoning, and your good to go. |
