well ... sort of anyway ...
They have used vegetable oil in Canada for a long time. Every time they heat and cool the oil though it becomes more saturated. They only change the oil about every 10 days or so ... by the end of the cycle, the oil is almost completely saturated. You can tell by how brown the french fries are ... the lighter the colour, the less saturated the oil that they are cooked in ... |
