Have loved Indian cuisine for many years and know how to prepare basic curry dishes: rogan josh, tikka masala, etc. I am from the South and know Cajun cuisine very well... The real deal.. Would love to exchange recipes with someone from India who could teach me some regional dishes like you would make in your home.. Cajun cuisine, a combination of French, Spanish, and African, has a lot in common with Indian cuisine and it would be fun to see what we could discover.

The best French cuisine is so simple it's complicated. First and last, they are maniacs about using the absolute freshest ingredients they can get their hands on. I have noticed too that when they go heavy on the sauce one should be cautious of what's up under there for they will eat anything. As for reference, Julia Child is a great place to start. Escoffier is the granddaddy of French cuisine and his recipes are as complicated as making a nuclear bomb and the ingredients are about as hard to come by, but it is fascinating. Also check out Alice Waters and Jacques Pepin.
