The best French cuisine is so simple it's complicated. First and last, they are maniacs about using the absolute freshest ingredients they can get their hands on. I have noticed too that when they go heavy on the sauce one should be cautious of what's up under there for they will eat anything. As for reference, Julia Child is a great place to start. Escoffier is the granddaddy of French cuisine and his recipes are as complicated as making a nuclear bomb and the ingredients are about as hard to come by, but it is fascinating. Also check out Alice Waters and Jacques Pepin.
