I havent relocated to NC yet and i dont think i will be close to your meeting place but i want to say what your doing is a great idea! Unfortunately many people are shy but even more are players. I hope when i move there can be a meet and greet near my area and possibly the 2 groups could meet. I dont understand why it is soo hard to get people to come out for a simple cup of coffee, it's not like im asking them to donate a kidney & it's not a HUGE investment of time or money. 
I look at it as "Navy Seal" dating. Get in, get out & no one gets hurt. That is unless you happen to be a psychotic terrorist!  Dont meet anyone you're interested in or attracted to, it's no BIG deal.
