Carbs give us energy, so we need them, too! So don't cut those completely out of your diet. Just try to avoid the simple carbs and eat good complex ones :)

For snacks, what about veggies? Lots of grocery stores have pre-cut veggies packaged up. Just buy one of those, take them home, put them in individual baggies if the whole tray won't fit in the fridge (or you want to be able to take it with you somewhere), and you're good to go when you get hungry!

You're welcome! I also prefer quick and easy stuff, and if chips are the easiest thing, I'll go for that. But if I have a baggie of baby carrots or cherry tomatoes or something in the fridge, I'll eat that. Small fruits are good, too, if you have a sweet tooth.

Oh! For an actual meal, I like the following pasta recipe:
Some whole wheat pasta (any kind, but I prefer short pastas)
Some frozen vegetables (whatever kind you like)
Nuts (I've only used pecans, but you could experiment with others)
Olive oil
Garlic powder
Parmesan cheese

Cook the pasta as directed. Cook the vegetables as directed. Chop the nuts. They'd probably be good toasted, but I am too lazy. When the pasta is done cooking, strain it and the vegetables (if you cooked them on the stove) and mix them in together. Add enough olive oil to lightly coat the pasta. Stir in the garlic powder and cheese, to taste.

It's really simple, but it's pretty well balanced. If you had other seasonings you could use those, too, but I was a poor college student when I made it up, and haven't experimented with it.

And it's for a store in my neck of the woods. Now I can go and buy up all the Carbs I want and believe I am eating all Low Carbs! yeah yeah!

When I was a poor college student I was a Lacto Vegetarian. I ate all the Carbs I wanted, but I think I've only gotten worse. Thanks for the recipe though. I'll try it cuz it has Pasta! Yummm!!flowerforyou

Oh I think I just got swayed cuz the people I was hanging with at the time were all meat eaters. Without paying too much attention I found I was eating meat. At first it was only Chicken. I couldn't stand the smell of Beef. I thought it smelled like Urine. Things changed after a few years.

Now I love Beef and only like the terribly fattening Fried Chicken. I find the older I get the more it makes sense that I go back to my Vegetarian ways. So, be careful.

I can go days without meat but I eat way too many Carbs in Bread, Rice or Dessert forms.

Does anyone have any Low Carb - No Carb recipes that are really tasty?

I am a Carb Junkie and need help quick! When I think of eating, it's always Carbs. I usually go for something quick and easy and that always seems to be someting with Bread, Rice, Tortillas...you get the picture. The Atkin's Diet should be good for me but I couldn't hang for more than 2 days! I'm a pretty good cook (according to my friends and family) so I can handle most recipes.

Anyone got any reasonable and fairly easy suggestions?


I am the same way but i've been on atkins for about 5 months and let me tell you it works.. the thing to remember is that those carbs are going to give you momentary satisfaction... I eat a ton of chiken and vegitabels... and if you want the sweet they have low carb candies and low carb ice cream wich is great...

I went on the Atkins diet 2 years ago and it really worked as long as I stuck to it .... I crave mashed potatos and this recipe is a good substitute .


CAULIFLOWER "MASHED POTATOES"

1 head cauliflower
1/4 cup skim milk
Salt & pepper
Paprika

Cook cauliflower until fork tender. Place cauliflower (in pieces), skim milk, salt and pepper in blender. Whip until smooth. Pour cauliflower into small baking dish. Sprinkle with paprika and bake in hot oven until bubbly.
