Braised Pork in Rice Flour - Feng-zhen-rou
Ingredients
0.5 kg of pork (shoulder part)
150 g of fresh green peas
100 g of rice flour
5 g of shallots and fresh ginger root
25 ml of soy sauce, bean curd, and cooking wine
8 g of caramelized sugar
0.5 g of salt
Preparation
Cut the pork into 10×2×1/3 cm strips and roll in rice flour.
Finely chop the shallots and ginger.
Mix the pork strips, shallots, ginger, caramelized sugar, wine, bean curd, and soy sauce in a bowl so that the pork is on the bottom, with the spices on top, followed by the peas, and then the remaining spices. Sprinkle the remaining rice flour on top of the pork and shake.
Preparation
Put the prepared dish on the fire and simmer under the lid on very low heat for 2 hours.
Turn the finished dish over onto a plate so that the pork is on top.
