When I was 8 years old, I got my first cookbook..Betty Crocker.
I selected as my first dish to make..pizza. Looked easy enough, and indeed it went very well. The family sat down to eat it with much anticipation. I took the first bite. I spit it out. See, that day I learned the lesson of salt. NEVER use it if not called for. I had looked at that ready-to-bake pizza and thought, at 8, since my dad sprinkled salt on everything we ate, I would save him that step. I have been very careful, ever since, to always make the recipe the first time, exactly as shown :-) |

The one thing I hear the most when I'm explaining a recipe is "I never know how to adjust the flavor" to wit my response is "taste your spice rack." Spend a little time putting a dab of everything on your tong to give you some idea what kind of flavor it will add. Oh, and don't forget to eat a little bread to cleanse the palate between each one and that the application of heat can alter its flavor.
