I've never tried the butter thing, and I really like butter. That sounds really interesting. I'm going to have to try that. Does it keep meat from drying out a little better on a cheaper cut of meat too? Do you use clarified butter, or just softened and brushed? Have you ever added garlic and/or other seasonings to the butter first?

OMG. That was so worth the read and the pictures have me so hungry right now I almost feel like running to the grocery store right now Unlike probably most people, I like my meat very well done and this method looks perfect for me (with a rib-eye, not a thick porterhouse). My daughter fixed me a steak like this when I visited her in Seattle last summer...pan sear then finish up in the oven. She told me that's how all the restaurants fix 'em. Was the best steak I have ever eaten...also the very FIRST meal my daughter has made me in her 34 years. |

How about a little something to go with that T-Bone
Diced potatoes (washed & skin on) Chopped bell peppers Sliced Onion Salt & Pepper Butter or Olive oil (I prefer olive oil) Barbeque Seasoning Basil Garlic Powder Place in foil and toss on the grill. This goes well with steak |
