Any Kind of Jam & Oatmeal Bars
Posted on August 29, 2013

Recipe created and contributed by Becky Hoff, who says: “I tried these bars with blueberry jam, but I think the recipe would work well with any variety of jam. One-and-a-half cups (12 ounces) of jam seems to be just the right amount.”
Any Kind of Jam & Oatmeal Bar Ingredients

1 cup (16 Tablespoons) room temperature unsalted butter
1 cup brown sugar
1 teaspoon vanilla extract
1 ½ cups oats
1 ½ cups all purpose flour
½ teaspoon salt
½ teaspoon baking soda
1 ½ cups (12 ounces) jam of your choice
Any Kind of Jam & Oatmeal Bar Directions

1. Preheat oven to 400 degrees F.

2. Cream butter, sugar, and vanilla until fluffy.

3. Whisk together dry ingredients (not the jam), then mix them into butter mixture. This will resemble a slightly dry cookie dough.

4. Press 2/3 of the mixture into a greased 9″ x 13″ pan. Spread jam over the top, then crumble remaining dough over the jam layer.

5. Bake at 400 degrees F for 20 to 25 minutes, until brown on top. Cool on a rack, cut into bars, and serve.

Well traditionally mint jelly is used on lamb. But you could use it on thumbprint cookies, pour over cream cheese block to dip sturdy crackers in or stir into a cup of black or green tea.

I haven't really tried this, but it's about that time of year for a nice hot cup of tea. You could try adding it to the hot tea instead of sugar. It should melt and then it would be sweet an have that Mint Julep feel. If you do try it, let me know.... I just might end up buying some mint jam myself then bigsmile

when I was a kid we would make a sweet muffin. Fill the muffin pan with about 1/2 your amount ...put a spoon of jelly in and then the rest of the batter..A nice surprise!

Slice a pocket in a pork chop, fill, add a slice of apple, and panfry it or bake in foil.

Think it would be a good filling for a caramel or chocolate cup as a small finger dessert.
