Spinach Alfredo Pizza
INGREDIENTS 1 (10 ounce) package frozen chopped spinach, thawed and drained 1 (10 ounce) container Alfredo Sauce 1 (6 ounce) can sliced mushrooms, drained 1 (10 ounce) can artichoke hearts, drained and quartered 1/2 cup grated Parmesan cheese 4 cups shredded mozzarella cheese 2 unbaked pizza crusts 2 tablespoons olive oil 1 can sliced black olives (optional) DIRECTIONS Preheat the oven to 350 degrees F (175 degrees C). Spread pizza crusts out onto baking sheets or pizza pans. Place the spinach and Alfredo sauce in a saucepan, and warm over medium heat. Stir occasionally. Spread 1tablespoon of olive oil onto each pizza crust. Spoon half of the Alfredo and spinach onto each crust, then arrange artichoke hearts over the sauce layer. Top each pizza with half of the mozzarella cheese and Parmesan cheese. Sprinkle mushrooms and black olives on top. Bake pizzas one at a time for 20 minutes in the preheated oven, or until the bottom is nicely browned. You can also freeze this and have it whenever you want . |

Garlic Chicken Spinach Alfredo Pizza Spinach Alfredo base: 1-1/2 cups light cream 3/4 cup Parmesan cheese, grated 1 tsp Salt 1/2 tsp Pepper 1/2 tsp Garlic Powder 3 cloves of Garlic, minced 1 tsp Oregano 2-3 oz Fresh Leaf Spinach, chopped The cream is heated to boiling then turned down to a simmer while the other ingredients are mixed in. Remove the mixture from the heat when it begins to thicken. Lightly coat 2 boneless chicken breasts, cut into slivers, with flour and fry it lightly in Olive Oil and about 2 cloves of minced garlic. Spread a thin layer of Alfredo spinach sauce onto the base and top with thinly sliced tomatoes, garlic chicken and mozzarella cheese. Bake for 15 minutes at 475 degrees. |

Spinach Feta Pizza INGREDIENTS 3/4 cup water (70 to 80 degrees F) 2 tablespoons olive or canola oil 1/2 teaspoon sugar 1/2 teaspoon salt 2 cups bread flour 2 teaspoons active dry yeast TOPPING: 1 garlic clove, minced 1/8 teaspoon garlic salt 2 cups chopped fresh spinach 1 small red onion, sliced and separated into rings 1 cup sliced fresh mushrooms 1 cup shredded mozzarella cheese 1/4 cup crumbled feta cheese 1/2 teaspoon dried basil DIRECTIONS In bread machine pan, place the first six ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface. Knead for 1 minute. Cover and let rest for 15 minutes. Roll into a 12-in. circle. Transfer to a greased 12-in. pizza pan. Cover and let rise in a warm place until puffed, about 20 minutes. Sprinkle with garlic and garlic salt. Top with the spinach, onion, mushrooms, cheeses and basil. Bake at 400 degrees F for 35-40 minutes or until crust is golden and cheese is melted. Let stand for 5 minutes before slicing. |
