You probably know about using spaghetti squash in lieu of real pasta...

Tonight I used a vegetable peeler on a small zucchini, making "noodles" all the way down to the seeds (which may be discarded.) Sautee the zucchini in just a few drops of olive oil for about 2-3 minutes - just enough to wilt it and make it slightly transparent.

I served 1/2 a dice chicken breast and some marinara sauce on it with just a sprinkle of parmesan. It was delicious and felt like I was having a bowl of pasta. Yummy! Give it a try!

Mmmmmmmm :-)

I have made a 'spaghetti' toss by using thin
skices of the following: zucchini, carrot,
yellow bell peppers, red bell peppers, same
as you, with olive oil, with some garlic and onion.

i did the same thing but used ribbons of zicchini and carrot turned out wonderful! and was pretty to look at also :) got the recipe from rachel ray
