Topic: Stuffed portabello mushrooms!

Oh man, you guys have no idea unless you have had these....Im Sicilian and love to cook so here goes.

Grab up some large fresh portobello mushrooms, as big as you can get em....make sure you wash em...left the dirt on once...not a pretty sight.

Anyway, yer gunna need freshly groung LEAN beef, sausage and turkey. Mix the three meats and set that aside. Next grab some of your favorite cheese....I like provalone, baby swiss and maybe abit of chedder to add sharpness and color. Mix and set aside.

Now for the sauce. You can use just about anything but I like to use alfredo and freshly diced tomatos mixed.(try not to use jared stuff if you can.)

Ok, here we go. Take the mixed meats and brown them in a large skillet, but not fully cooked, browned....just enough to get the most grease out. At the same time start your sauce (without the tomatos) on medium until that simmers. When the sauce begins to simmer toss in the maters so they dont get too soggy, then set the temp to low on the sauce. Take your 3 quater cooked meat off the flame, drain as much grease as you can, then stuff your shrooms. Grab a cookie sheet(NO NON-STIC, it kills the flavor) and cover it with foil. Place your now stuffed shrooms on the sheet(its ok to overcrowd)and stick them in the oven on 350 for about 15 to 20 minutes. Just check the meat on one shroom to make sure they are done.

Yank the shrooms out(and you have to do the rest kinda quickly)place one shroom on one plate, toss the cheese mix all over the meal mixture while it is pipeing hot(cheese before sauce so it has time to melt), wait a few seconds then smother all the shrooms on each plate with the sauce......and yer done.

This dish is great for a meal or a simple bite. Goes great with a white wine or even beer, your choice. Toss in some garlic laced flat bread and its that much better.

Im tellin ya folks you will burst in yer jeans once you have had my shroom.....um no pun intended.blushing

I have had several of his dishes and they are rather good, he just has not gotten around to cooking this recipe.

The first and last time I had portabello mushrooms they tasted like soap. The guy that cooked the meal for us said they were flavorful mushrooms. I am sorry anything that taste like soup is far from being flavorful. laugh
