I dont eat woodchucks, but do eat beaver meat, the body meat is much like beef,as in texture and taste,now the tail is a different matter,like to cut the tail off at the body and then lay it on a grill to roast it. peal the outer skin off the tail and chunk up the meat,add it to stew or make a dip to eat it with.
