Has anyone else ever had a stunning success when trying to come up with a meal when the cupboards seem bare? I had just a few pieces of leftover chicken, a bag of baby carrots and staples and somehow came up with this impressive dinner. I made basic crepes which is way easier than most people suspect. For those all you need is flour, salt, milk, eggs, butter and cooking oil. Then I deboned the chicken got rid of the skin and diced the meat pretty small. I julienned the fresh baby carrots on a mandolin. Then I made a basic white sauce, (butter, flour, salt, pepper and milk) adding the carrot strips just as the sauce came to a boil, stirring constantly brought it to a boil again and stirred for about a minute til the sauce thickened, I then seasoned that with fresh ground nutmeg and added the chicken and stirred gently just long enough for the chicken to warm up. Put the chicken filling in a strip down the middle of the crepes and rolled them up. Three to a plate with a perpendicular strip of sauce across all three for garnishment. They were beautiful and the nutty flavor of the nutmeg highlighted the still slightly crunchy carrots which contrasted with the creamy white sauce and slight bounciness of the crepes. It's as good as anything served in a fancy restaurant.

I think we enjoy a lot of the same foods. Ain't it funny how some people let themselves miss out on good food in the name of a healthy lifestyle when it's all good if you keep your portions reasonable and partake of a wide variety of things in every food group.

I totally agree.

About a decade ago, I weighed well over 300 pounds.

I finally decided I needed to lose weight.

All I did was cut down on how much I ate. I still ate whatever I wanted...just less of it.

I am still a tad over my " optimal " weight...but I still eat whatever I want.

I found some philly chive dip and tossed that in some pasta with some smoked salmon I found in the freezer once. Wasn't too bad.

A lot of times I throw leftovers together in a tortilla and add some cheese to the mixture...with sour cream and salsa on the side...My "leftover burritos" usually taste better than expected....These days I feel like the "leftovers queen" or the "goulash gourmet." It's fun to keep trying new combinations.
