Can't you get Gumbo just about anywhere in TX?


No, it is a regional thing. Houston is a gulf coast port for seafood and adjacent to the Cajun areas of East Texas there is lots of gumbo. Try getting good gumbo in, say, Fort Stockton.

It ain't gonna happen.


they do have fresh water shrimp farms in Fort Stockton. But gumbo? I don't think anyone out here would eat it. I mean it's kinda just watered down leftovers isnt it?

File gumbo with shrimp


Ahhhh! A classic!

Chicken and Sausage are favorites too, as are mixed seafood (shrimp, crabs, oysters, and fish), alligater, duck, etc.

I have many, many, many recipes but I also have a cookbook with nothing in it but gumbo recipes.

The heat is usually provided by red pepper (cayenne). You can reduce it or add it to taste.

Some gumbos are thickened with file (ground sassafras leaves) or okra, or both.

What sounds good?

Well just here to say I have eaten fried alligator tail and like most fried meats it tasted like frog legs but tougher, which of course tastes like fried chicken. So now you know. I have eaten many a crawfish tail but just have not had the opportnunity just yet to get drunk enough to suck out a head just yet, cause anything that oozes out green and gray juice is going take me getting really drunk fore I try that one.

Don't know that I could eat fried alligator, have never eaten frog legs either... I'll stick to fish tacos..hah!

Frog legs are GREAT! Alligator is too..Chonch is my favorite of the three..Conch and alligator in Gumbo is just too good to not pig out on!:banana:
