[/quote I don't think I ever ate it. I will have to get Joe to give me a recipe. Both the boys love seafood so it would be a nice change

If you get it, please share it. My sister makes a turkey chili and would probably like a turkey gumbo recipe

No, it is a regional thing. Houston is a gulf coast port for seafood and adjacent to the Cajun areas of East Texas there is lots of gumbo. Try getting good gumbo in, say, Fort Stockton.

It ain't gonna happen.

Good Gumbo is spicey, but never with hot peppers.

File gumbo with shrimp

Ahhhh! A classic!

Chicken and Sausage are favorites too, as are mixed seafood (shrimp, crabs, oysters, and fish), alligater, duck, etc.

I have many, many, many recipes but I also have a cookbook with nothing in it but gumbo recipes.

The heat is usually provided by red pepper (cayenne). You can reduce it or add it to taste.

Some gumbos are thickened with file (ground sassafras leaves) or okra, or both.

What sounds good?

I had to work on a project near Beaumont, Texas for about a year and due to the extreme alligator population, I ate a lot of gator. I found that some parts of the tail has meat that is rubbery and chews kinka like a chicken nugget. Other parts are a lot like chicken with a good texture and flavor.

I bet Jayne doesn't get much gator!

they do have fresh water shrimp farms in Fort Stockton. But gumbo? I don't think anyone out here would eat it. I mean it's kinda just watered down leftovers isnt it?
