as a preface this recipe is a standardized recipe using weight for measure not ur usual kitchen volume measures. i will present the following in both english and metric (to the best of my ability) measures... /// ... also u may like to half this recipe, it makes quite a lot.

bananas, ripe (extra ripe even) - 20 oz / 567 g
sugar - 20 oz / 567 g
oil - 8 ox / 227 g
sour cream - 5 oz / 142 g
eggs - 8 oz / 227 g
buttermilk - 4 oz / 113 g (half a cup)
baking soda - 4.5 tsp (this was the one regular measure)
flour * - 20 oz / 567 g
nuts** (i used walnuts) - 6 oz / 170 g

* the recipe calls for bread flour, however, i think for a lighter texture pastry or all purpose flour will do just fine, and as a matter of fact, i used pastry flour when i made this recipe for my practical midterm and i scored 150/150 AND the muffins taste just wonderful and have a marvelous texture.

** the amount of nuts for this recipe seems a bit excessive in my opinion, when i made this recipe i used a little more than half of what it says.

and lastly as an addendum to this recipe i incorporated a splash of vanilla essence and some mace (nutmeg) and cinnamon. i suppose one could add allspice or hint of clove even, but i wouldn't add too much of either of the last two. to be sure, i only added about a quarter to maybe half of a teaspoon of cinnamon and not even but maybe an 1/8 of a teaspoon of mace to the recipe. i NEVER go light on the vanilla. i probably sloshed about a tablespoon of vanilla into the mix. I LOVE VANILLA. but again, these were my personal additions to the recipe. the above recipe as you read it is the way it is, all the garbage i've typed after is what i added, subtracted or modified. now... on to the mixing method

DIRECTIONS:

prepare ur muffin tins or banana bread molds ahead of time with sufficient nonstick or rub down well with butter and flour, whichever u prefer to lube with.

sift together all the dry ingredients into your mixing bowl, prepare all your wet ingredients in another and add in all at once, mix at a medium to slow speed and only just gently until all the ingredients are wet and together. DO NOT OVERMIX!! i can't stress this enough... mix only JUST until everything is wet and comes together. you would do well to have mashed the bananas ahead of time and mixed up all the other wet ingredients well before adding them to the dry mix. a few banana lumps are no big deal, in fact can be somewhat desirable.

now for muffins, use a #20 scoop (yellow handled disher) or 1.6 fl oz / 3 Tbsp + 1 tsp per muffin cup. then bake at 350F or 175-180C for about 30 minutes...

*** i dunno what scale english people or europeans use to measure time with, so when the sun reaches half past the zenith of the fifth moon orbiting saturn when it is at the midway point of its elliptical movement around the sun. biggrin :sillygrin: teeheeheeheehee :laughing:
