Evening everyone! How is everyone tonight?

I'm doing pretty good. I won a contest on a Radio station here. I get to bring 5 of my friends to Nolan Plaza (fancy place downtown with a fountain by the Civic Center) and I will be the VIP for lunch by the fountain. Get pic taken, flowers, WONDERFUL box of chocolates from a fancy store here, STAM, and get fed while listening to great music....I am sooo excited. My teacher friends and I are all going. :banana:

Betty, I have made an Almond Joy bar before and it was REALLY good.

Here you go Betty:

Makes about 3 dozen bars

5 ounces Eagle sweetened condensed milk

1 teaspoon vanilla extract

2 cups powdered sugar

14 ounces premium shredded or flaked coconut

One 24-ounce package semisweet chocolate chips

Blend the condensed milk and vanilla.

Add the powdered sugar to the above mixture a little bit at a time, stirring until smooth.

Stir in the coconut. The mixture should be firm.

Pat the mixture firmly into a greased 9x13x2-inch pan. Chill in the refrigerator until firm.

In a double boiler over hot (not boiling) water, melt the chocolate, stirring often. You may also use a microwave oven. Place the chips in a bowl and heat for 1 minute on high: stir, then heat for 1 minute more.

Remove the coconut mixture from the refrigerator and cut it into 1x2-inch bars.

Set each coconut bar onto a fork and dip into the chocolate. Tap the fork against the side of the pan or bowl to remove any excess chocolate.

Air-dry at room temperature on waxed paper. This could take several hours, but chocolate sets best at cool room temperature (below 70 degrees). You may speed up the process by placing the bars in the refrigerator for about 30 minutes.

And if you feel like a nut, follow the above recipe with these changes:

Add 1 cup dry-roasted almonds to the list of ingredients.

Substitute milk-chocolate chips for semisweet chocolate.

In step 8, place two almonds atop each bar before dipping.

Here's one for all you ice cream crazy people:

Makes 1 serving

1 Heath candy bar

2 1/2 cups vanilla ice cream

1/4 cup milk

1 teaspoon fudge topping

Freeze the Heath bar.

Break the candy into tiny pieces with a knife handle before re- moving from wrapper.

Combine all of the ingredients in the blender and blend for 30 seconds on medium speed. Stop the blender to stir the mixture with a spoon; repeat until well mixed.

Pour into a 16-ounce glass.

You can also make this treat with a variety of other candy ingredients. Some of the more popular Dairy Queen add-ins include pieces of Butterfinger candy bars,Snickers, Reese's Peanut Butter Cups, and Oreo cookies. Now's your chance to be creative.
