This recipe is fun, easy, and tasty. We used to help make them as kids (I ate a lot of jalapenos when I was little). It is a very good dish for guests because, chances are, they will not have had one before.
10 Jalapenos 1 12 oz package shredded cheddar cheese 1 (1 pound) package ground pork sausage (your favorite - I like Jimmy Dean) 1 (10 count) refrigerated biscuits) cut down one side of the fresh jalapeno and remove the seeds and pith. Rinse and stuff with cheese. Slice sausage and flatten with hand to make a flat disc. Wrap around jalapeno and place in baking dish. Bake for about ten minuted at 350F or until sausage is brown. Turn once while cooking. Remove from oven and drain on paper towels. Take each biscuit and stretch to fit around each "egg" and seal the edges. Bake until each biscuit is golden brown. It is more fun to let people find out it is not just a biscuit all by themselves. Note: If you are afraid of the "heat" you can use the canned peppers which are marked "mild, medium, or hot". I like the fresh peppers the best. |

I love these things.... i've never made them myself but i've had them at parties.
I have also had them stuffed w/bbq pork in a biscuit instead of the sausage and cheese. |

I made a number of "mutant" eggs today with my son (home from college) and they were all good. Different, fun, and REALLY filling...
