Just saw your question for this and figured I would give you the receipe
I follow. Just had it over the wknd. Family loves it. Let me know

Meatloaf:
1/2 cup dry bread crumbs
2 tablespoons extra-virgin olive oil
1/2 onion, diced
2 cloves garlic, minced
2 teaspoons dried oregano
2 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 1/2 pounds meatloaf mix
1/3 cup grated Parmesan
2 teaspoons Worcestershire sauce
2 large eggs, beaten

Gravy:
1/2 medium onion, diced
3 cloves garlic, smashed
1 teaspoon dried oregano
2 tablespoons extra-virgin olive oil
1 tablespoon butter
3 tablespoons tomato paste
1 (15-ounce) can chicken broth
1 (15 1/2-ounce) can crushed tomatoes
1/4 cup grated Parmesan
1 teaspoon red wine vinegar
1 teaspoon kosher salt
ground black pepper


Preheat oven to 350 degrees F.

Add the olive oil, onions, garlic, oregano, salt, and pepper to the
skillet and cook until onions are tender, about 8 minutes. Let cool
slightly. Add the onions to the bread crumbs along with the meat,
cheese, and Worcestershire sauce. Toss and mix gently. Add the eggs and
stir to coat the meat completely.

Transfer to a foil-lined sheet pan and gently press into desired shape.
Bake for about 45 minutes.

Gravy: Cook the onions, garlic, and oregano in the olive oil and butter
in a large skillet over medium-high heat until browned, about 6 minutes.
Add the tomato paste and bay leaf. Cook for about 3 minutes. Add the
chicken broth and crushed tomatoes. Bring to a boil over high heat.
Reduce heat to maintain a simmer and cook sauce until it thickens, about
5 minutes. Whisk in Parmesan cheese, vinegar, salt, and pepper. Slice
the meatloaf and serve with the gravy.

mrsart sounds good. Foe a twist I like to pack a sausage in the middle
for a surprise! Use lean beef and the fresh sausage flavor goes
throughout. I like itlian or brats...use what you like

Heavenly Meatloaf


3 slices white bread, crusts removed
1/2 c. milk
2 tbsp. olive oil
2 c. finely diced onion
1/2 cup. finely diced celery
4 cloves garlic, crushed
3/4 cup finely grated carrot
1 lb. ground sirlion
1/2 lb. ground pork
2 large eggs
3 - 4 springs parsley, chopped up
2 tbsp. Dijon mustard
1 tbsp. Kosher salt
2 tsp. freshly ground pepper & more to taste
1/2 lb. sliced smoked bacon

2/3 c. brown sugar, packed
1 tblsp. Coleman's yellow ground mustard
1 tbsp. tomato paste


Heat the oven to 375°. Cut the bread into 1 inch cubes and place in a small bowl. Pour milk over it & set aside.

Heat oil in large skillet over medium heat. Add onion, celery & garlic; cook until soft and translucent, 3 to 5 minutes. Remove from heat & let cool. If you don't go in for scrubbing pans, line a pan with foil. This baby makes a mess (although it comes up pretty easily if you fill the pan in hot, soapy water).

Place carrots in a large mixing bowl. Add the milk-bread mixture, meat, eggs, parsley, Dijon, salt & pepper and onion mixture. Combine well. Place mixture in a large ungreased baking dish (a 9 x 13 cake pan is about right) or roasting pan. Shape into a 5 X 12 inch loaf. Run bacon around the sides of the loaf, then overlap bacon across the top, covering meat, thusly:

Season with salt & pepper.

In a small bowl, combine sugar, ground mustard & tomato paste to make a glaze. Brush meatloaf all over with glaze. Bake, brushing every 15 minutes or so with glaze, until juices run clear when loaf is pierced with a 2 pronged fork & the bacon is crisp, 1 to 1 1/2 hours. Let cool 10 minutes before slicing.

Wow.....you guys have some great recipes!!!!

Here is my version...very simple~~~

1 or 2 lbs hamburger
1 package onion soup mix
1 egg
1/4 cup water
1/4 cup ketchup
bread crumbs

Mix it all together, adding more bread crumbs as needed. Put it in a loaf pan. Top it with Ketchup and brown sugar. Bake at 400F for about 45 minutes to an hour.

My son likes this and he hates everything!!!

Heres how I make my meatloaf

1 lb hamburger
1 small onion
some green pepper...depends on how much you like
1 egg
about 15 cracker...crumbled up
salt, pepper, garlic
1/2 cup ketchup

miss it all together and form it and cook it at 350 degrees for about 90 minutes.
