I was feeling lazy last night. I wanted something light but tasty.
I took a frozen cod fillet and put the vacuum sealed package under water for a while to mostly thaw (it only takes a few minutes). I then put it in a microwave dish and poured about half a cup of spaghetti sauce over it (Ragu Classico). I then copped up about 1/4 cup of pimento stuffed green olives and put that on top. I microwaved it for two minutes and then let it set for a few minutes to "even out" the heat (temper). I then nuked it again for two minutes and found that the fish was just flaky. The flavors were complex and the dish was healthy. It was really good and really easy. |

Wasn't it salty? The saltiness of the green olives added a sharp contrast to the other flavors and really set the dish off. Olives and spaghetti sauce kinda naturally go together anyway. Since I normally don't salt anything anyway, I wasn't concerned about the sodium. Hey, I know this is one weird sounding dish. But as odd as it sounds, it tasted really good. And other than the sodium in the olives, is extremely healthy. Low fat, low carb, high protein, high flavor. |
