1 large green pepper- Diced
1 large onion - diced
1# 90 % ground beef- browned
1 tablespoon- sugar
pinch or more - hot pepper flakes- salt, and pepper to taste
1/4 cup vinegar
2 cups cooked rice
1/4 cup ketchup
1 can - 26oz. tomato soup
2 tablespoons - oil
2 strips beacon - cooked crisp and diced

combine onion,sugar,hot pepper flakes, salt and pepper, vinegar,diced beacon, 2 tablespoons of oil in large pot and simmer till onions are soft.

add tomato soup with 1/2 cup of water,green peppers, ketchup, simmer till green peppers are still a little crunchy.

Then add ground beef and rice, stir in and simmer 10 more minutes,mixing often.

Hmmmmmmmmm, I've never heard of it made with so much stuff in it. Maybe that's why I've always ignored it when served with my Tex Mex. It has very little flavor!! I've also seen it with cooked corn and jalepenos.

Very authentic it will be better instead of simmering put it in a cataplana (lockable copper dish for Spanish rice) and put in the oven 370 for 15 to 30 minutes

Easier cheesier spanish rice:

Cook rice as usual, mix in about 1 cup salsa and a cup of shredded cheese (or 1/2 cup cheese dipping sauce), mix well. Serve :)

Sounds Great! My mother made it in a way that sounds similar. I'm looking forward to trying this one out.
