I purchased a bag of sauerkraut when I picked up a corned beef brisket for St. Patrick's Day. I never opened the bag. Now, I need to use it. Does anyone have a recipe, such as a casserole that I can use the whole bag in? OR, can it be frozen??? NEED HELP. Thanks

Yep, all the above... Also, any unused Sauerkraut may be frozen.... ... Pack it into moisture-vapor-proof containers, seal, label, and freeze. The product will be safe to use, but the quality will be different. Frozen sauerkraut may be stored for one year. Two pounds shouldn't be excessive amount for a large roast or several pork-chops... Invite some friends over... Have a party... Make 'em buy the meats... |

Boy, those were quick responses. I like the idea of freezing it. Who knows, I may need it someday. Or, like someone sugggested color it green and throw it in the yard. I do have some bare spots out there, and Easter is coming. Do you think the kids will love the new grass to find the easter eggs in?????

Chocolate Sauerkraut Cake;
INGREDIENTS * 3/4 cup drained and chopped sauerkraut * 1 1/2 cups buttermilk * 2/3 cup butter * 1 3/4 cups packed light brown sugar * 2 teaspoons vanilla extract * 2 eggs * 2/3 cup unsweetened cocoa powder * 2 1/4 cups all-purpose flour * 1 1/2 teaspoons baking powder * 1 teaspoon baking soda * 1/4 teaspoon salt DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift cocoa, flour, baking powder, baking soda and salt together and set aside. In a separate small bowl, combine buttermilk with sauerkraut and set aside. 2. In a large bowl, cream butter, brown sugar and vanilla until light and fluffy. Add eggs and beat in. Add flour mixture alternately with sauerkraut mixture. Beat only until blended. 3. Pour batter into 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for about 45 minutes, or until toothpick inserted into cake comes out clean. Cool cake and frost with your favorite chocolate frosting. |

Thanks to everyone for your advice and comments. I stored half of the sauerkraut for later use and made a Sweet and Sour Chicken Casserole with the second half. The recipe included spiced pear preserves, swiss cheese and wide noodles. It turned out wonderful. Sorry I cant share it with you.
