8 jalapenos
16 bacon strips
cream cheese
sun dried tomatoes
1 garlic clove
16 sturdy toothpicks
medium cookie sheet
Set oven to 375 degrees

half all 8 jalapenos and core them taking the vien and seeds out.
chop the viens and seeds into tiny pieces, make sure you use gloves when doing this, you don't want any surprises later if you don't. LOL
place the tiny pieces of jalapeno core into a small bowl.
Take the cream cheese and mix it with the jalapeno cores
Take the garlic clove and mince it fine, mix it with the cream cheese mixture.
Take some sun dried tomatoes and dice them fine.
Add the tamatoes to the cream cheese as well.
Now, take your cored jalapenos one at a time, and fill them at a nice level with the cream cheese mixture and set of the pan.
When you have finished filling them all, take your bacon and wrap a strip around each piece of jalapeno and secure it with a toothpick by sticking the toothpick through the jalapeno in a way so that the jalapeno can lay flat without letting the cheese come out. usually from the side of it to the other side.
Now, make sure they all have decent space between them to evenly distribute the heat. about 1 inch and a half.
Now, bake your Jalapenos for about 30 minutes, or use your own judgement keeping an eye on them, because everyones oven is differant in how it bakes.
Take them out, serve them up on a plate and you have a treat that is irrasistable. You may even want to make more than that, because they will go fast. smiles happy happy

These are delicious I make these everytime I find fresh jalapenos at my local market. The only difference is that I use only cream cheese and leave the cores out totally because I don't like them toooooo spicy.

Here's a pic of some I made not to long ago. Ignore my sisters finger in the picture.

Queene these are not at all like the jalapeno bites you get at fast food joints.

i agree with leaving the cores out to bring the spicy way down. They are really good at a barbque or a side dish for hamburgers and hotdogs. I love the pic of them, giggles. That was funny too, your sisters finger in it, giggles. happy laugh
