Oh man I love sweet potatoes! That's my favorite part of the Holiday dinners is the sweet potato casserole!  Well, that and the broccoli and cheese casserole too! Okay,I'm shutting up now, I'm making myself hungry, lol.

First you bake it, then you hollow it out. Then you take thosse innards and mash 'em. Real butter, real cream in that mashing. Repack the potoatoes, sprinkle with cheddar, finely shredded, and bake 'em again.
