because beef doesn't hold in moisture like turkey or ham do....hey...I said moisture why? the fibers in beef are more pourous then in turkey or ham...hense, why they are more....moist

depends how you cook it. a properly prepared roast, can be cut with the handle of a knife!!!!
turkey can dry out also......but just add a lil vinegar to each serving to moisten and bring out the flavor.... |
