why? the fibers in beef are more pourous then in turkey or ham...hense, why they are more....moist

depends how you cook it. a properly prepared roast, can be cut with the handle of a knife!!!!
turkey can dry out also......but just add a lil vinegar to each serving to moisten and bring out the flavor.... |
