depends on what kind of vegetarian youre talking about, if you eat fish, there are many kinds of fish that have the same consistency as meat, swordfish for example is a great substitute for meat if you're needing to sink you teeth into some kind of flesh....

Flesh is good - we like flesh.

Seriously, though - here's one:

Cook some tube-shaped pasta.
Add olive oil, sun-roasted tomatoes, pine nuts, fresh basil, and parm cheese. Easy.

black beans, yellow rice with cumin, diced onions, olive oil and hot sauce ... yummy

Try Boca (soy) Burgers with horseradish, ketchup and mayo as well - topped with sauteed mushrooms on a toasted wheat bun.

Just stop over and I'll cook it for you. I'm good like that.

We can gut some fish afterwards.

eeewwwwww... i think boca burgers are disgusting... i like garden veggie burgers better.... morning star has good veggie burgers... and their chick patties taste just like the real thing!

if you aren't vegan... a good summer or breakfest recipe is...

a 1/2 cup of ice, 1/2 cup of nonfat vanilla yogurt, handful of strawberries or mixed berries (if frozen dont have to add ice), a little nonfat milk, 1/2 banana or whatever fruit you want....1/2 cup of oatmeal or walnuts....and put in the blender and enjoy!

Or you can grill some portabellas - they're pretty beefy tasting. Probably won't know the difference.

If you want to spend a little more effort - eggplant parmesan. Also will not know the difference.

Beef up the red sauce with lots of garlic and red wine.
