Lets start this thread, for the creation of leftover chicken. Any kinda of chicken parts, roasted, broasted, charbroiled. it can be soups, casseroles, salads. Give your favorite or if you've found a favorite to share.

I make good old fashioned Jewish penicillin, (chicken soup), but it's too complicated & kind of an "as you go" recipe.... but, now I'm hungry for it. Thanks a lot!! :wink:

hhm, i dont know that I have anything specific for leftovers. I have boys.. There arent really ever leftovers. lol

2 boneless skinless chicken breasts, halved
Cajun Seasoning Rub
Salt
Pepper,
Franks Red Hot Sauce
Large Can Tomatoes or Tomato Sauce
(Some times I use Salsa instead )
Mozzarella Cheese


Wash chicken and pat dry. Take Cajun Seasoning rub and lightly coat each piece of Chicken. Brown each peice of chicken in a frying pan with a bit of butter. Add peices of chicken to a baking dish. Cover with the tomato sauce or tomatoes.I then add the Franks Hot Sauce. Just a few shakes. Salt and Pepper, If you don't like the tartness or acidity from the tomatoes sprinkle a small amount of sugar over the top. ( less than a 1/4 tsp ) Bake until chicken is cooked through. About 10 minutes before you are ready to remove chicken from the oven, Add the Mozz Cheese.

Serve over your choice of White Rice or Egg Noodles. We also normally have broccoli or asparagus as a veggie.

There are no exact measurements to this recipe. We kinda make them up as we go and learn to season to our personal taste. The nice thing is you change this recipe up really easily. Last time I made it. I got some portabello mushrooms and sliced them, green peppers and onions and added them to the mix.
We just have fun with it

Hey,hey maybe some of us guy's can cook to.OK left over chicken really doesn't matter how it was cooked but broiled seem work best.Heat large skillet over med to hi heat.Melt butter and add a large tortilla and heat for about one min and turn.On half of the Tortilla spread chedar cheese.Chop chicken intovery small peices.When cheese melts add chicken and pacante.Fold tortillia in half.makes a great Quesadilla.To add flavor you can add sour cream and to add alitle crunch add shreded cabbage.enjoy

If you are not into fried food just use the same mixture and restuff the potatoe skin's and sprinkle your favorite cheese on top and bake at 350 for a10 min or until cheese melts.

Tortilla soup...
leftover chicken chopped
2 cans of cheddar soup (Campbells) add milk instead of water
shredded cheddar cheese
fajita seasoning
lime juice
tequila for a twist
You can make tortillas..or buy some
add to soup when ready to consume:)

You can add grilled peppers and onions if you like them..

chicken spread:
Leftover chicken, at room temperature..
mayonase or plain yogurt (for calorie counters)
a splash of white wine
fresh tarragon herb
salt and white pepper to taste..

make sure the chicken is diced, boneless and skinless
combine all ingredients in a food processor and blend till smooth
serve on toast or crackers...
