This stuff is so good .... I like it with fried fish .
This is my spin on Paula Deens recipe which calls for the crackers to be mixed in and for you to use Saltines and boiled eggs . I don't like it that way because the crackers get soggy and Ritz are way better .


1 large tomato (finely chopped)
3 green onions (finely chopped)
1 1/2 cups mayonnaise
Salt (to taste)
Freshly ground black pepper (to taste)
2 sleeves Ritz crackers (Crushed)


Mix first 5 ingredients and place in fridge for an hour before serving . Serve over crushed crackers .

Heres another Paula Deen recipe that goes over great at a fish fry ....

You can also put these in a crock pot instead of baking them if your having a party that way your guests can have them hot whenever they get ready to eat . I LOVE Grits !

Tomato Grits
2 cups water
1 1/4 cups milk
1 teaspoon salt
1 cup quick cooking grits
1/2 cup plus 1 tablespoon butter
1/3 cup diced green onions
4 ounces processed cheddar cheese, cubed (suggested: Velveeta)
1/4 teaspoon garlic powder
2 1/2 cups shredded cheddar cheese
1 (10-ounce) can diced tomatoes and green chilies (suggested: Ro-Tel)

Preheat oven to 350 degrees F.
In a saucepan, bring the water and milk to a boil. Add the salt and slowly add the grits and return to a boil, stirring constantly for 1 minute. Reduce the heat, cover, and cook for 3 minutes. While stirring the grits add the 1/2 cup of butter and stir until butter is melted. Cover and cook for 3 to 5 minutes, or until the grits are thick and creamy. Remove from heat and set aside.
Using a skillet, saute the onions in the remaining tablespoon of butter for 1 minute. Add the processed cheese, garlic powder, 1 1/2 cups cheddar, and onions to grits, and stir until the cheese is melted. Add the tomatoes and mix well. Pour the grits into a greased 8 by 11 by 2-inch casserole and bake for 40 minutes. Sprinkle remaining 1 cup cheese over the casserole for the last 5 minutes of cooking time.

Yes as a side dish .... at all of our fish fries we serve this along with cheese/tomato grits .

Can't forget the hushpuppies ...

6 cups peanut oil
1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 small onion, chopped
1 cup buttermilk
1 egg, lightly beaten

Using a deep pot, preheat oil for frying to 350 degrees F.
Using a mixing bowl, stir together the cornmeal, flour, baking soda, and salt. Stir in the onion. In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter, 1 teaspoon at a time, into the oil. Dip the spoon in a glass of water after each hushpuppy is dropped in the oil. Fry until golden brown, turning the hushpuppies during the cooking process.

Brandy,A quick dip for you.put a can of rotel in crock pot and heat it and add one lb bos of velveeta and heat until cheese is melted best served with dorito's.Quick and easy and everyone loves it.

Thats a good one longshot ..... try the same with a can of hormel chili without beans mixed in .
