I was wondering if anyone knows how to cook low-fat, low-carb meals that are EASY but taste good?? I just found out that Im diabetic and need diabetic friendly meals to cook?flowerforyou

kirk might be able to help. he's on my friends list. he's an incredibly savory cook, not as much a sweets cook, although i'm sure he's good at that too.

I have a sweet tooth and I have a dessert I always took to my mom who was a diabetic, she is with Jesus now!

Can of crushed pineapples (drained and rinsed)
large tub of cool whip lite
1- 8oz size of cream cheese lite
splenda sugar substitute to taste ( I use about 1/4 cup)

mix the cream cheese and the cool whip until blended then add the Splenda and mix, add the pineapple an stir.

Pour into a graham cracker crust or pie shell and chill until set.

This is sweet, cool and lite. We all love this one.

Taste of Home magazine or web..
Inside are recipes from all over the US that people share..

There are usually 2 pages of diabetic exchange recipes in each issue. I never made any of these recipes because I like the regular recipes and tried many of them.
