Why is Béchamel sauce "the mother" of all sauces......
if you are adding scalded milk to a roux???

Shouldn't the Roux be the mother of all sauces???

I concurr Ddn, Roux should be the mother of all sauces, however, Bechamel is not the "mother" of all sauces, there are in fact five mother sauces:

Tomato Sauce
Espagnole Sauce
Veloute
Bechamel
Hollandaise

Personally I like to poach them at 185 degrees in Whole, Unsalted butted, with lemon zest, thyme, and bay leaves.
