I am all of a sudden craving a fish sandwich or fried shrimps. Glory! And I had to come into this thread.

Most types of fish taste great when done simply. They are great with any kind of citrus and fruit based sauces and glazes. The meatier the fish, the heaevier a sauce it can hold and beware of overcooking. Fish continues to cook after removed from heat for a few min so bear that in mind.When I still ate fish (vegetarian now) I liked to grab fresh dill, parsley and cliantro and combine them in a lemon and orange juice based butter sauce.

i made crab linguine alfredo the other day and i swear i could've been eating in an upscale restaurant. it was SO good, and it was SO easy.
melt 1 tbsp butter and saute onions and garlic add 2 cans of drained crab meat add 2 cups of whipping cream and about 2 tbsp of tomato paste and bring to a boil. reduce heat and simmer for about 5 minutes or until sauce thickens that's it! (oh, it also called for 1 tsp. fresh tarragon and saute with onions and garlic, but i didn't have any). i found, too, that i needed to spice with salt and pepper a touch and i also added some parmesan cheese with the cream; other than that, it was absolutely delicious. |

I love Louisiana Cajun Shrimp Boil...
It has huge chunks of potato, half ears of corn, lemon wedges, shrimp, and the secret is using cajun crab boil. You boil the potato and corn in water with the cajun seasoning. Just before its done add the shrimp and let it steam up. Serve with lemon wedges. Its spicy, but fabulous! |

Steamed Blue Crabs
You need a large pot with a rack, under the rack put 1/2 a beer, (drink the other half) a splash of vinegar, a handful of celery leaves & add water til just below rack. Get it boiling, layer live Cheasapeake Bay blue crabs with a handful of Old Bay Seasoning & salt on each layer. Add extra red pepper if you like them really spicy. put the lid on tight , weight it down if you have to for a few minutes to keep the crabs in. when they turn red, dump them on newspapers on a picnic table, sevrve with ears of fresh silver queen corn, home made bread & butter pickles, & ice cold beer. I know I will get posts that this is cruel, but you DO NOT COOK DEAD CRABS!! Now unless you are a real Shoreman, enjoy figuring out how to get to the meat! Hard work, but worth every sweet & spicy morsel! Left overs? Make Crabcakes or Crab Imperial. Shrimp are good steamed this way also. |
