Peanut Pumpkin Soup

4 Tbsp. (1/2 stick) unsalted butter
4 cups canned pumpkin (or leftover cooked & pureed pumpkin)
2 cups cooked pureed Sweet potato
1 cup SMOOTH peanut butter
6 cups Chicken stock
1 tsp ground black pepper
1 tsp salt
snipped fresh chives, for garnish
Sour cream, for garnish

DIRECTIONS:

1. Melt butter in a soup pot over medium heat. Stir in the pumpkin, sweet potato & peanut butter.

2. Add the stock, pepper & salt and stir well until smooth. Reduce the heat to simmer and
cook for 20 minutes.

3. Before serving, garnish the soup with Chives & sour cream.

My father used to make a peanut soup, that was excellent!
He didn't use yams or sweet potatoes- didn't use sour cream either. But I'll try your recipe, if I can't find his. It does seem interesting. Thanks.

It all sounds good, except for the peanut butter. Do you guys think it would still be good without it? Maybe add more sweet potatoes to it?

I think it would be kind of bland without the peanut butter...you'd need to spice it up with something...
