      Peanut Pumpkin Soup
 4 Tbsp. (1/2 stick) unsalted butter 4 cups canned pumpkin (or leftover cooked & pureed pumpkin) 2 cups cooked pureed Sweet potato 1 cup SMOOTH peanut butter 6 cups Chicken stock 1 tsp ground black pepper 1 tsp salt snipped fresh chives, for garnish Sour cream, for garnish DIRECTIONS: 1. Melt butter in a soup pot over medium heat. Stir in the pumpkin, sweet potato & peanut butter. 2. Add the stock, pepper & salt and stir well until smooth. Reduce the heat to simmer and cook for 20 minutes. 3. Before serving, garnish the soup with Chives & sour cream. | |

      My father used to make a peanut soup, that was excellent!
 He didn't use yams or sweet potatoes- didn't use sour cream either. But I'll try your recipe, if I can't find his. It does seem interesting. Thanks. | |

      It all sounds good, except for the peanut butter. Do you guys think it would still be good without it? Maybe add more sweet potatoes to it?

      I think it would be kind of bland without the peanut butter...you'd need to spice it up with something...
